The Soul of Gaza: Cooking with Kusa Squash (Palestinian Cooking Class)

Join Gazan chef Samah Nijim for an authentic Palestinian (Gazan) cooking experience!

We will harvest kusa squash from the Living History Garden, and then Samah will teach us how to cook with it!

Samah lends authentic Palestinian heritage with contemporary culinary creativity, reviving the region’s food memories through deeply flavored dishes. Samah features signature Gaza recipes and emphasizes local ingredients and techniques that preserve both nutrition and authentic taste. Lessons combine concise theory with step-by-step practical demonstrations, plating and storage tips, and troubleshooting advice so participants can reproduce the dishes confidently at home or in professional kitchens. Samah also includes cultural stories tied to the recipes, creating a space for exchange and communication, and sharing food together, where every plate reflects the spirit of Gaza.

Sliding scale $0-60.

50% of class fees will go back to Samah’s family in Gaza.
