Ingredients:
1 recipe of pizza dough (from scratch or a fresh/frozen one from the store)
Corn meal
Olive oil
2 cloves garlic or a bunch of garlic scallions
Cheese (goat or cow)
3 large shitake mushrooms, sliced
1 bunch/bag of arugula, or any other fresh greens
Salt and pepper to taste
½ lb lamb or pork sausage (optional)
Instructions:
Crush 2 cloves of garlic and place them in 2 tablespoons of olive oil. Roll out your pizza dough on a cutting board, then transfer it to a pizza stone or baking sheet covered in a fine layer of cornmeal.
Spread the oil and garlic mixture on the dough and sprinkle with salt and pepper. Add the goat cheese in dollops or a spread in a fine layer over the crust. Rip or chop the arugula up and sprinkle it onto the pizza. You can also add arugula right when you pull the pizza out of the oven.
If you are using sausage, chop or break it up to your desired size and sauté it in a pan, adding the mushrooms at the end to cook them lightly. If you aren’t using sausage, sauté the mushrooms in a tbsp of butter or oil. Add mushrooms & sausage to the pizza and place in the oven at 500 °F degrees until done (about 15 minutes).
Variations:
Spread a thin layer of tomato sauce on the crust.
Sprinkle chopped herbs and lemon juice over the toppings once they’re on the crust or add herbs and lemon juice to the garlic/olive oil mixture.
Crumble sautéed and seasoned tempeh over the pizza in place of the sausage.
