Ingredients:
Crust
2 cups flour
3 tbsp sugar
1 stick of butter, softened
1 egg, beaten
3 tbsp orange juice
Pinch of salt
Cheese Filling
1 cup fresh cheese (ricotta, soft goat cheese, soft cow cheese etc…)
1/8 -1/4 cup honey
¼ tsp nutmeg
1 tsp almond extract
Berry Topping
3 cups fresh berries
1/8-1/4 cup honey
1 tsp lemon juice
¼ tsp cinnamon
Instructions:
Start by making your crust. Mix your butter, sugar, salt, nutmeg and flour together with a fork, or in a food processor until you have a crumbly mixture. Stir the orange juice and egg in until you can form the dough into a cohesive ball. If it’s not totally forming into a ball, add a little bit of ice water. Cover the dough with a bag or a lid and leave in fridge for 30 minutes.
While the dough is resting, mix together your cheese – add honey, almond extract and nutmeg to flavor your cheese.
Roll out your dough onto a baking sheet and spread your cheese mixture directly onto it. Mix your berries, honey and lemon juice in a separate bowl. Then transfer them on top of the cheese layer, leaving about an inch of dough around the perimeter of your tart.
Fold in the perimeter of the tart, so that it creates a crust to hold in the fruit. Sprinkle the top of the tart with cinnamon.
Bake at 425°F for about 25-35 minutes or until the fruit is bubbling and the crust is golden.
Variations:
Make this a savory tart by adding 1 tsp dried or 2 tsp fresh rosemary to your crust and 1 tsp. balsamic vinegar to your berries, finishing the tart on top with a sprinkle of pepper or other fresh herbs.
Add 1 tbsp of fresh lavender (ground up with a mortar and pestle or a coffee grinder) to your cheese mixture to add another great flavor to a sweet or savory tart
