3 cucumbers, chopped and peeled (if you like)
2 tomatoes, chopped
1 cup spinach or romaine lettuce, chopped
2 tbsp vinegar (rice or apple cider)
1 tbsp olive oil
Juice from 1 lemon or lime
½ cup chopped basil, cilantro or mint
Salt and pepper to taste


Combine all the vegetables in a bowl and mix them together, adding the oil, vinegar and lime.
Taste and adjust as needed – you may find that you would like to add more tangy vinegar or herbs to your salad.


Add 1/2 cup crumbled or cubed feta or fresh cheese or a 1/4 cup of plain yogurt
If you want to make this more of a meal, add 1 cup of a cooked grain such as rice, millet or quinoa to your salad
Add 1/2 cup raw snap peas, or par-boiled, or steamed green beans, chopped
