Kale Carrot Apple Salad


1 bunch of kale

1 apple

1 carrot

Handful of raisins

3 TBSP Fresh lemon juice

2 Tsp Maple Syrup

2 TBSP Olive oil

Salt to taste

Pepper to taste



Remove Kale leaf from stems. Chop kale leaves finely into a large salad bowl.

Massage kale for 3-5 minutes, or until kale is softer.

Slice apple into slivers and grate carrot. Add to the kale.

In a small bowl or measuring cup, mix olive oil, maple syrup, lemon juice, salt and pepper and whisk until blended. Add dressing to salad. Top with raisins. Enjoy!
