 HONEY MISO NOODLE SALAD

Ingredients:

6 ounces egg noodles (cooked al dente)
2 cups arugula or other mustard green
1 cup carrots or radishes (thinly sliced)
1 cup hakurei turnips (thinly sliced)
1/2 cup fresh cilantro
1/4 cup green onion (thinly sliced)
1 tablespoon sesame seeds
1 pinch chili flakes
1/4 cup honey miso dressing

Directions:

In a large bowl, add noodles, arugula, carrots, radishes, turnips, cilantro, honey miso dressing. Toss until all of the ingredients are evenly dressed. Top with green onions, toasted sesame seeds, and chili flakes.

HONEY MISO DRESSING

Ingredients:

1/4 cup mild white miso
1/4 cup rice vinegar
2 tablespoons soy sauce
2 tablespoons mild honey
2 teaspoons toasted sesame oil
2 teaspons green garlic (chopped fine)
3/4 cup canola oil

Directions:

In a mixing bowl, add miso, vinegar, soy sauce, honey, sesame oil, chopped green garlic. Whisk until smooth. Add canola oil to the miso and whisk until all of the ingredients have combined to create a creamy dressing.
