Ingredients:
2 1/4 – 2 1/2 cups almond flour
1/2 tsp sea salt
1/2 tsp baking soda
1/2 cup butter, softened
1 tbsp vanilla
1/4 cup maple sugar or brown sugar
1/4 cup maple syrup
1/4-1/2 cup almond butter
A handful of cacao nibs or ground up cacao beans in a coffee grinder
Instructions:
Preheat oven to 325 °F. Mix dry ingredients together. Whisk well.
In a separate bowl, mix sugar, butter, maple syrup, almond butter and vanilla together until they are a uniform texture. Add dry ingredients to butter mixture and mix until uniform. Put in fridge for half hour if dough is too soft to form into balls. Form dough into golf ball size balls and space a few inches apart on a cookie sheet. You can layer the cookie sheet with parchment paper before putting the dough on, if you like.
Bake until the bottom of the cookie is slightly browned and your kitchen smells great -about a half hour. Let cool before removing from pan.
