1 lb kale, any kind (about 2 bunches)
2 scallions, scapes or green garlic stalks, chopped finely
Juice from one lemon
2 tbsp oil
Salt and pepper to taste
1 cup cooked quinoa, millet or brown rice


Combine the lemon juice, oil, salt and pepper in a bowl. Tear up or chop the kale into bit sized pieces and mix into the bowl, being sure to coat the leaves with the oil and lemon mixture.
Start to rub the kale together with your hands – it will quickly soften and absorb the other flavors.
Once the kale is soft, mix in the scallions, cooked grain and any of the optional items below.


Add 2 tsp miso, honey or maple syrup to the oil mixture
Chop up a tart fruit such as an apple or mango and add to the salad at the end
Add 1/4 cup toasted sunflower seeds, pumpkin seeds or nuts
Add an avocado
