4 peaches, skin on, cut in small dice
4 medium tomatoes, cut in small dice
½ cup onion, fine dice
4 tsp white balsamic vinegar
2 tsp red wine vinegar
¼ cup olive oil
Salt, pepper to taste
3 tbsp cilantro or basil, chopped
½ jalapeno, fine dice (optional)


Cut the peaches in small dice and place in a medium bowl. Cut the tomatoes in small dice and add to peaches with any juices. Add finely chopped onion. Mix the vinegars and olive oil and add to the bowl. Season with salt and pepper and gently stir. Add the chopped herbs and jalapeno if desired. Let mixture sit for 5 minutes, adjust seasoning and serve.
Serve with fish or pork tacos, chips, or as a garnish for soup.
