1 bunch garlic scapes
1 tbsp cooking oil
2 tbsp fish sauce
1 tsp sambal oelek
1 inch ginger


Heat cast iron pan or wok until very hot. Add oil and garlic scapes. Allow to char by not moving them much. When almost cooked through, add fish sauce, ginger, pepper, and salt. Garnish with chopped scallions. Serve as a side dish or with some sticky coconut rice for a quick summer dinner.
