Ingredients:

4 cups spinach, washed
1 pint strawberries, hulled and sliced
1/2 cup maple walnuts, chopped
1/2 cup crumbly cheese
1/4 cup olive oil
1/4 cup canola, sunflower, or vegetable oil
1/3 cup raspberry vinegar
2 tbsp orange juice
1/4 cup chopped chives
Pepper to taste

Instructions:

Combine the first four ingredients in a large bowl.
Combine the rest of the ingredients in a jar and shake until everything is combined — you can also mix them together with a whisk.
Dress the salad with 1/2 cup of the vinaigrette.

Variations:

Use apple cider vinegar in place of raspberry.
Use apple or lemon juice in place of orange juice.
Add 1/2 cup chopped or grated radishes or salad turnips to the salad.
Use the dressing over cooked beets, arugula, walnuts, and fresh chevre.
Add 1 cup of sliced cooked chicken breast, lamb chops, or steak.
