Ingredients:

1 ½ pounds tempeh, finely chopped
1 green pepper or two stalks of celery, finely chopped
2 scallions or half an onion, diced or minced
¼ cup fresh herbs of your choosing, finely chopped
1-2 carrots, grated
¼ cup mayonnaise OR a little less than 1/4 cup yogurt plus 2 tbsp olive oil
1 tsp tamari or soy sauce
Salt and pepper to taste

Instructions:

Steam the tempeh, so that it softens up. This should take about 5 minutes. Set aside to cool.
Mix together the remaining ingredients, then crumble the tempeh into the mixture and stir together.
Taste and adjust seasoning as you see fit.

Variations:

Add a teaspoon of curry powder and a dash of cider vinegar or a handful of nuts and raisins to add sweetness and crunch.
